Apple Peach Butter

Well, I just got done writing some notes in a few greeting cards!  After the wedding, I wanted to get our thank you cards written right away … I don’t like sitting on things like that!  If something needs to be done, I want to get it done!  All of those have been done for a while now, and sadly the gifts have stopped trickling in …  :(

Today it was a “get well card” for a friend who is battling leukemia, and a thank you card for some friends who had us over for dinner.  Are we the only ones that actually write out cards anymore?  I just think it gives much more of a personal touch!  I really hope they enjoy them!

I had made this apple butter just about a month ago, and it is all gone! Definitely time to make some more!  Apple Peach Butter – totally sugar free, gluten free, and delicious!  Not to mention it can cook while you sleep, giving you a non-caffeinated reason to hop out of bed in the morning!

Apple Peach Butter

Makes about 3 cups

Print this recipe!

9 apples, cored and chopped

4 peaches, cored and chopped

1 lemon, juiced

1/2 tsp allspice

1/2 tsp cloves

1/2 tsp ginger

1/4 tsp nutmeg

Yes, I admit it, I cheated and used frozen peaches!  I could not find any peaches ANYWHERE.  I guess that means that peach season is over … tear…  peaches are by far my favorite fruit!

Chop apples and peaches and place in a crock pot.  You do not need to peel them – yay!  Squeeze the juice from the lemon over the fruit.  Add the spices.

You can use any type of apples you want … the tarter the apple, the tarter the sauce will be.  I used fuji apples.  A mix of apples would be great as well!

Note:  You can use cinnamon if you would like.  My husband is allergic, so I do not use it.

Stir well.  Cover the crock pot, cook on high for 4 hours, and then turn down to low for 8-10 hours.  (This may depend on the heating capability of your crockpot.)  Or more!  The more it cooks, the better your house will smell, and the more “buttery” it will become.

Let cool, and place in a covered container.  Store in the fridge.  This will keep for 2-3 weeks.  Although it may not last you that long!

I like to have it with yogurt.  This is one of my yogurt creations —  yogurt, apple butter, cashews and ground flax seed.  Yum!
