Brr!!! I woke up this morning, and the temperature was at 1 degree!! Baby, it’s cold outside!
Even Sammy did not want to leave the warm fire. He just camps out here!
Days like this I really miss oatmeal. Since deciding to go gluten free and grain free, I am not eating oatmeal. I used to have oatmeal for breakfast every morning!
I decided to try breakfast cereal with quinoa flakes, and it turned out really well! Very comforting, and filling! This kept me full for hours!
Apple Quinoa Breakfast Cereal
Print this recipe!
2/3 cup quinoa flakes
1 cup unsweetened almond milk
2 tbsp chia seeds
1/4 tsp ginger
1/4 tsp allspice
1/4 tsp cloves
1 cup unsweetened applesauce
1 large apple, peeled and chopped
2 tbsp walnuts, chopped
In a medium pot over medium heat, whisk together quinoa flakes, milk, chia seeds, spices, apple and applesauce.
Cook for 15-20 minutes, until milk is absorbed, and mixture has thickened.
Pour into a bowl and sprinkle with walnuts.
I thought this was plenty sweet on its own – I think the applesauce really bumped up the “natural” sweet factor. My husband added some maple syrup.
Serve with a latte!

I keep wanting to try quinoa flakes as a hot cereal, but so far I’ve only used them as a binder in veggie loaves. Maybe I’m reluctant because they’re so expensive! I need to find a cheaper souce before I start liking them hot. Ha! Yours look good, though. A definite try when I get around to it
I find it interesting that you don’t consider quinoa a grain. I know it technically is not a grain, but most people would classify it as such. Does this have something to do with your specality diet? Just curious. I like to consider it a seed/protein because it is. I also don’t consider wild rice a grain or a rice because it’s a grass, and it’s WAY lower in calories than real rice. I wonder how wild rice would be as a hot breakfast…hum…
First of all, I totally agree with you about how expensive the quinoa flakes are!! I have found them on amazon, but it doesn’t seem to me that would save me much money. There is some info on there about quinoa and why it is technically a seed not a grain. But I do get so confused sometimes! I try to just listen to my body and see what doesn’t agree with me. I love quinoa – so versatile! Interesting about wild rice — I bet you could use it for cereal!
