I love breakfast, and I love breakfasts that I can take to work to reheat in the morning. I also love eggs and cheese! So, this recipe should come as no surprise.
This really can be a clean out the fridge breakfast. You can add in whatever veggies you have, or even little bits of leftovers. Add a little hot sauce, and you are good to go!
Clean Out the Fridge Breakfast Frittata

1 medium onion, diced
2 medium potatoes, peeled and diced
1 large red pepper, seeded and diced
1 tsp Italian seasoning
4 large eggs
2 large egg whites
1/4 cup feta cheese
1 roma tomato, sliced thinly
Preheat a medium large skillet over medium high heat, and preheat the oven to 400 degrees.
Add the onion to the skillet, and the diced potatoes. Season with salt and pepper. Saute for 10 minutes – until the onion is browned, and the potatoes are mostly cooked. I cut my potatoes small to make sure they would get done.
Add in the red pepper, and cook another 1-2 minutes.
In a small bowl, combine the eggs and egg whites. Season with salt and pepper. Using a whisk, mix until well combined. Pour over the potato/onion/red pepper mixture. Add in the feta cheese and place in the oven to cook the egg mixture.
Cook for 5-10 minutes, or until the eggs are set.
Remove from the oven, and arrange the tomato slices on top of the egg mixture. Season with some salt (or seasoned salt – or smoked sea salt which is what I used!) on top of the tomatoes. Place back in the oven for a few minutes, to warm the tomatoes.
Cut into 4 slices, and serve!
I love this combination because it has protein (eggs), carbs (potatoes), and fat (cheese). And it kept me full all morning!

ahh thanks! Sure, it would still be great without the cheese! I’m thinking of eliminating dairy from my diet, so I may just try that this weekend! I just put the cheese on top after it baked, so the consistency would be the same either way.
Eggs seem to have a way of accepting disparate flavors and allowing them to meld into something fantastic! Good recipe!
