This recipe is due to 2 new loves in my life … cultured buttermilk and white balsamic vinegar.
I really love the cultured buttermilk. It is so easy to make yourself, and tastes just like buttermilk! As for the white balsamic vinegar, I had never heard of it until I needed it to make some jam. (White Balsamic Peach Jam – totally awesome!) I found a little bottle of white balsamic vinegar at our farmers market for $30, but I did not want to pay that much money! Finally, I found a bottle at Whole Foods for $5, which was much more up my alley! Since I only needed a little bit for the jam, I have plenty left!
The broccoli is actually really easy to chop up in the food processor. Yes, it is really finely chopped, but I like it!
The buttermilk dressing is just so good, and perfect for this salad! Even though your “typical” broccoli salad might have bacon in it, I really didn’t miss it!
Homemade Broccoli Slaw
Adapted from Smitten Kitchen and Apartment Therapy
Print this recipe!
Salad:
1-2 medium heads broccoli, chopped into florets, and the stems chopped
1/2 cup slivered almonds
1/2 cup dried apricots, chopped
1/2 cup red onion
1/3 cup cherries, chopped
Dressing:
1 cup cultured buttermilk
1/4 cup mayo
2 tbsp white balsamic vinegar, or regular balsamic
1/2 tbsp sugar (I used sucanat)
salt and pepper to taste
Cut the broccoli into florets, and then chop the stem in little pieces. You could leave out the stem if you want, I wanted to use the whole thing!
In a medium bowl, combine the broccoli, almonds, apricots, red onion and cherries. Mix well.
Prepare the dressing – combine the buttermilk, mayo, vinegar, and sugar. Mix to combine.
Pour the dressing over the broccoli and stir to combine. Add salt and pepper to taste.
I really loved all the flavors – the crunch of the almonds, the chewiness of the apricots, the sweetness of the cherries – and the tanginess of the buttermilk dressing!




I never thought to do something like that with broccoli, that is a great idea. This would be a great way to get kids to eat it.

Hi Jane! This recipe keeps reminding me of coleslaw. I barely know what to do with broccoli other than cooking it, so this recipe with it raw will be much healthier. Also, when I buy a giant bag of it at Costco, I will be able to use it up better.

Hi Jane, you’ve intrigued me right from the start: cultured buttermilk. I haven’t made that one yet, but I am sure it’s delicious. Are you going to share it in one of your posts? You know, I chop broccoli fine too, this way my teenager can’t pick it out of his salad…:)
