I’m not sure why, but I have been thinking of broccoli stuffed potatoes for the last couple days. Just one of those weird times you crave broccoli? Um yeah, I know that’s a little weird
This is really so easy, it doesn’t need a recipe, but here you go! Basically, I cooked the potatoes in the oven, steamed the broccoli, then assembled it with some cheese mixed in! Sure, it’s a little carb heavy, but I had salad for lunch, so I’m golden!
Broccoli Stuffed Potatoes

4 medium sized potatoes
1 crown broccoli, chopped into bite sized pieces
1/4 cup milk
1 ounce cheese, shredded
salt/pepper to taste
Preheat the oven to 350 degrees F. Scrub and poke the potatoes. Bake at 350 degrees for 40 minutes, or until fork tender.
Remove from the oven, and let cool slightly. Slice each potato in half, lengthwise.
Using a spoon (a grapefruit spoon works the best!), remove most of the inside of the potato – I like to leave a little around the edges so they still stay in a potato shape. Place the potato pulp in a separate bowl.
Meanwhile, steam the broccoli.
Combine the potato pulp with the milk, and salt and pepper. Beat with a hand mixer until smooth. (I didn’t add any butter to this – but you can if you want!) Add the broccoli and cheese to the potato mixture.
I used this cheese I got at Costco. I am loving it! I’m really not sure what kind of cheese it is .. it almost tastes like mix of sharp cheddar and parmesan. So good!
Stuff the mixture back into the potato shells, and place on a baking sheet. Place back in the warm oven for 15 minutes, or until warm and the cheese is melty.
Since I am back in my calorie-counting ways, I estimated these potatoes were 236 calories per potato half. However, I know that cannot be right! After I refilled the potatoes, I had all this “stuffing” left over!
I know where I went wrong – I estimated the size of the potatoes, and some were bigger, some were smaller. I think the calories in this dish will all depend on the size of your potatoes.
They still are good though!
