Happy hump day!
Do you have a favorite breakfast? For hubby and me recently, it has been cheesy eggs!
Ashley recently posted on putting 1 tbsp of mayo (or vegenaise) per 2 eggs scrambled. I decided to give it a try. LOVE! Something about it makes the eggs so creamy!
I just took 2 eggs, some milk, mayo, salt, pepper, and cook them in a skillet like normal. Then, at the end, I added in some cheese – in this case sheep’s milk feta (which is awesome!!! – I get it at Costco), and let it melt to be all creamy. Normally, I would use cheddar cheese, but we didn’t have any, and the feta really turned out awesome in the eggs!
It looks a little clumpy going in the skillet …
…but trust me, it turns out awesome!
Plus coffee! I have been drinking decaf recently.. love the froth!
So there you go, a quick and easy breakfast. Or dinner! I have been known to come home from work and cook up some eggs… filling and delicious!

I could eat breakfast all day, but I’m more of a sweet breakfast eater. I’ve been trying to eat more egg whites to decrease my sugar cravings. I have a Costco trip very soon and I will be on the lookout for that feta.

We Love having eggs for breakfast lunch or dinner! it’s the perfect protein in my opinion.
and the boys (declan, 2.5, Cullen 9m) gobble them up. I sautee spinach or add petite peas to ours for a vegetable – throw in any kind of cheese (your feta sounds delish) and serve with a piece of sprouted toast – it’s the perfect meal! there is something so warm and homey about scrambled eggs … reminds me of sunday mornings. I truly appreciate your post.

I totally agree – it is the perfect protein! That is a great idea to add veggies to the eggs! I do add spinach sometimes, or tomatoes. Peas sound really good with eggs though!

Eggs are way better with cheese!
No, I just wanted to make sure before I messed up the recipe-lol. I tried it with cheddar and for some reason the texture was a little grainy and wet so I’m going to try it again, maybe without any milk…and perhaps a different cheese.

I’ve never used Mayo in my eggs, but feta – YUMMMM! Just last night I had Breakfast For Dinner & had scrambled eggs w/feta crumbles – heaven on earth!

You should try the mayo sometimes! I really just use a little spoonful, but it really adds flavor and makes them so creamy! Eggs and cheese are the perfect combo in my opinion!
breakfast is good all day!! I have eggs for breakfast all the time!
I love “cheesy” eggs! I make mine with nutritional yeast and Daiya cheese!

I am actually having steak and eggs for dinner right now! Delicious. I have never hear of mayo in eggs but I will give it a try.

It is such a quick and easy way to “kick up” your eggs! I don’t make them any other way now!
I could eat eggs daily at every meal. I plan to have some tonight for dinner (over spinach and chickpeas). My hubby loves them with cheese.
Spinach and chickpeas (and eggs!) sounds really good! I’ve really been into black beans recently, but not chickpeas. I just cook some up!
I would love to make breakfast for dinner – not only is it inexpensive, but also quick! Sadly, my husband hates breakfast for dinner, it was always a treat for me and my daughter when he went out of town for business that we’d have breakfast for dinner.

ahhhh, that’s no fun! We love breakfast anytime. I make scrambled eggs so many times for a quick dinner! I love my eggs!
When we were newlyweds my Hubby used to make us cheesey scrambled eggs on weekends. Now I’m craving that.
