I love chicken! It is probably one of my most favorite meats to eat. I love that it is easy to prepare, and so versatile! You can make anything with chicken! It is full of protein, and relatively low in calories.
This last week, I bought this:
The pack included 4 drumsticks, and 2 chicken breasts. Not a bad price for organic chicken either!
For the first meal, we just grilled up the chicken. My favorite way to cook chicken! We had the drumsticks with some baby lima beans:
So good! I just put the chicken breasts in the fridge to work with later.
I decided to make chicken salad! I have really been trying to eat meals with more protein, so this fits the bill!
Chicken and Mango Salad
Print this recipe!
2 boneless skinless chicken breasts, cooked, and cubed
2 mangos, peeled, pit discarded, and cubed
1 stalk celery, diced
1/2 plain yogurt
1 tsp dijon mustard
2 stalks green onions, the green and white part, chopped
salt/pepper to taste
Combine the chicken, mango, and celery. In a separate bowl, mix together and yogurt and mustard. Add to the chicken mixture, and stir well. Taste – and add salt and pepper as needed. (I had seasoned the chicken before it was grilled, so it didn’t need a lot of salt/pepper).
I used these champagne mangos – they are higher in vitamin C than regular mangos and sweeter. And delicious! I love mango in chicken salad – I think it complements the chicken so well!
Sprinkle the green onion on top, and serve.
Nutrition stats: 1 cup = 188 calories, 4 grams of fat, 10 g carbs, and 27 g protein
Serve in lettuce leaves if you would like!
If you would like to further extend the chicken, you can keep the bones and make some chicken broth! Usually, I buy a whole chicken, so you get a little more to work with, but I think we did good for $5!

Love the deal! My store routinely has a 50% off bin – meat that needs to be sold that day. When I am low on proteins, I’ll stop by and stock up – yesterday I got four pork chops for $3 and two 1/2 pound blue cheese burger patties for $3.

I love lima beans, I don’t know why I don’t make them more than once every three years. As far as the chicken, I agree, I think chicken is my favorite. Love the chicken salad with the mango. Yay, it’s chicken salad season!

I’m jealous of the discount meat, I usually shop on base at the commissary, and the meat is already a decent price, so it usually doesn’t go on sale and further.

Yes, so true! I saw these in the stores back in the spring/early summer, I don’t know if they were seasonal then or not. They are so good!
