Whether or not you have been sick this winter season, I think chicken and veggie soup is so comforting! Sometimes you just need something warm and wholesome to eat. I mean, would you look at these icicles on the outside of our house?!?
It seems we are in a continual melt/freeze, melt/freeze cycle with our weather. I think Sammy is also ready for spring!
I love all the herbs in this soup – it really adds to the flavor.
Chicken and Veggie Soup

1/2 onion, diced
4 cloves garlic, minced
2 large carrots, peeled and diced
1 bell pepper, diced, or 4-5 mini peppers
1 – 14oz can diced tomatoes, or 3-4 roma tomatoes, diced
3 cups white beans, cooked, or 2 – 14oz cans, drained and rinsed
2 cups cooked chicken meat, chopped
3-4 cups chicken broth
2 tsp thyme
2 tsp sage
1 tbsp fresh rosemary, chopped, or 2 tsp dried rosemary
salt/pepper to taste
In a crock pot, combine all the ingredients. Cook on low for 4-6 hours.
That’s it! Since everything in this soup is cooked (except the veggies), you are really just heating it up. You can let it cook as little or as long as you want.
