This summer I have also had such a love affair with chicken sausages. I have gotten a couple different kinds at Costco, and I just love them! We’ve been grilling them a lot, or just eating them cold! I decided to combine the chicken sausages and macaroni & cheese, and make it Quinoa and Cheese!
Do I miss macaroni? Sometimes. Not when eating this though! I think the quinoa makes it creamier than macaroni ever could!
Chicken Sausage Quinoa and Cheese
Print this recipe!
1 cup uncooked quinoa
2 cups water
dash salt
4 chicken sausage links, cut into bite sized pieces
1/2 cup milk
1 tbsp arrowroot
1 tsp dry mustard
salt/pepper to taste
hot sauce to taste
In a medium saucepan over medium heat, combine the quinoa and water, and a dash of salt. Cook about 20 minutes, or until all the water is absorbed.
Add in the chicken sausage and cheese, stirring until the cheese melts.
In a small bowl (or measuring cup), combine the milk, mustard, and arrowroot. Stir with a whisk to combine. Add to the quinoa mixture. Heat until the mixture thickens slightly – about 10 minutes. Add salt and pepper to taste.
Serve with hot sauce, if desired.
Plus, it is another way to eat chicken sausage!
And cheese! And hot sauce!And broccoli!

I love mixing quinoa and cheese! Well, vegan cheese/nooch sauces. It definitely hits the mac n’ cheese spot without the mac.

This sounds really good and is so much healthier than pasta! But there is a good brown rice pasta out there that I’ve tried and can’t remember the name. I don’t know if they have noodles but I bet they do. Crud, I will go find out what it is and get back to you.

Quinoa is such a good idea! And you’re right – much creamier than macaroni. This reminds me very much of “cheese and grits,” which my husband (a southern gent) LOVES.

One of my favorite dishes is sausage and polenta and this looks quite similar. I’m sure the quinoa give it a different texture and even flavor for that matter. So good! Love the topping of cheese!
