Chickpeas and Spinach in Coconut Milk

Back when I posted my spinach smoothie recipe, Lori suggested I try Chole Palak, which I had never heard of!  I quickly googled it, and found this recipe.  Chole Palak simply means Chickpeas with Spinach!  It seems I am always buying the 2 1/2 pound bags of spinach from Costco, so I always have a ton of spinach to use!

I still haven’t tried that recipe, but I think it sounds so good!  I have really been cutting back on the beans I eat these days ..  wondering if they were causing problems with my stomach.  I finally decided to add them back in.  I decided to start with this recipe for Chickpeas and Spinach in Coconut Milk, that Sara from Cupcake Muffin posted!  The coconut milk sounded like it would make this so creamy, and I was not disappointed!  I always tend to stay away from recipes with a lot of cooked vegetables, but this seriously was so good, I can’t wait to make it again!

Chickpeas and Spinach in Coconut Milk

Adapted from The Kitchn, via Cupcake Muffin and Serious Eats

Print this recipe!

Serves 3-4

1/2 tsp coconut oil

1 small onion, peeled and diced

4 cloves garlic, peeled and minced

1 1/2 inch fresh ginger, peeled and minced

1/4 cup sundried tomatoes, diced

1/2 tsp red pepper flakes

1 – 15 oz can garbanzo beans (chickpeas), drained and rinsed

1 – 10 oz bag spinach, washed

1 – 14 oz can lite coconut milk

1/2 tsp salt

In a large skillet, melt the coconut oil.  Add the onion, and saute for 2-3 minutes.  Add in the garlic, ginger, sundried tomatoes, and red pepper flakes.  Make sure not to burn the garlic.  It can happen quick!

Add in the chickpeas, and cook just a few minutes, until the chickpeas are heated.

Slowly, in batches, add in the spinach.  Wait for it to wilt into the pan, and then add more spinach.  When all the spinach is added in, pour in the coconut milk, and add the salt.

Cook for a few more minutes, stirring to combine.

If you would like, you can serve over rice or quinoa, I had it just by itself!

The flavors are just so intense in this dish – all of them!  The ginger and garlic … onion .. coconut milk ..  red pepper flakes .. so good!

My husband liked it until I told him it was vegan … ooops….
