One of the things I love about using my crock pot is that really only takes a little prep time and the crock pot will do the work, and you will have a meal ready to go!
An added bonus – you come home and your house smells great!
BBQ Pot Roast

Serves 6
2 large sweet potatoes, peeled and cubed (about 1 pound)
2 poblano peppers, seeds removed, chopped
1 onion, sliced
2 cloves garlic, peeled and smashed
2 1/2 pounds eye round roast
salt and pepper to cover the roast
1 cup BBQ sauce
Season all sides of the roast well with salt and pepper. Place in the bottom of your crock pot. Pour the BBQ sauce over the roast. Scatter the veggies around the roast, starting with the pepper, then the sweet potatoes, then place the onion slices on top of the roast, followed by the garlic cloves.
Cook on low for 8-10 hours.
Slice meat, and serve with veggies!
Plus, now we have leftovers to enjoy the rest of the week!

Crock pot seems to be so hot over there in the US. I see a lot of posts with crock pot recipes. This is not the case here in Europe. I saw so far only one shop which sells this crock pot so with this recipe of yours, I’m starting to think that maybe it’s a nice Valentine’s Day present to ask from the hubby “wink”.
That is so interesting! I love my crock pot because it can be cooking all day and you don’t have to do anything, and it doesn’t heat up the house like an oven might. Good luck with the Valentine’s Day gift!
