Crockpot Monday: Fruit Compote AKA Ice Cream Topping

This last weekend, we broke records in Denver for the hottest temperature since 1750 or something like that.  In other words, it was HOT.  Still is!  But we are talking 100+ degrees out.

Time for some ice cream!  And you know what every bowl of ice cream needs –some sort of topping!

Fruit Compote in the Crockpot

Print this recipe!

16 oz bag frozen cherries

16 oz bag frozen peaches

12 oz bag frozen berries (strawberries, raspberries, blackberries)

1 cup water

1 tsp almond extract

1/4 cup cherry brandy

1/4 cup honey

Combine all ingredients in the crockpot.  Cook on low for 4 hours, or until fruit is warm and bubbly.  Enjoy by itself, on top of ice cream, or on yogurt!

You really can change this up however you want – add whatever fruit you want!  I wanted cherries and peaches, but thought the berries would be fun too!  Add as much or as little sugar as you want – I was thinking cooking this in red wine might be tasty too!

And I feel myself being guided towards the freezer right now!

As a side note, I’ve been having fun making non-dairy ice cream in my ice cream maker.  Basically, I have been combining one can coconut milk (I’ve been using the lite – although I think the full fat makes it creamier after it has been frozen), a few pitted dates, and combining in the blender.  Once smooth, just pour in the ice cream maker and let it go!  You can add in whatever you want – last week I blended up some blueberries with the coconut milk and dates, and had blueberry ice cream!  If you like it sweeter, you can add some honey or whatever sweetener you want to use.  If you want add-ins, just don’t add them until the end ..  I found that out the hard way!  Quick and easy ice cream!

And trust me, on days like today – you want quick and easy!

  3. Looks wonderful, Jane! We used to make something similar and called it tutti-fruitti. We put it over pound cake. You really come up with some interesting recipes to make things healthier. It’s always fun to read!

    • you do need some popsicle molds! :) They are super fun! I have heard of people just using dixie cups and putting a popsicle stick in that and freezing, so that is a cheaper version!
