I just happened by accident to come across this recipe on a quilting message board! Why is it you find some of the best recipes on the most obscure sites online?? I wanted to do something cauliflower-ish in the crockpot, and that recipe was rice and cauliflower + cream of mushroom soup. Since I haven’t had cream of anything soup in forever, I decided to wing it and see how it turned out!
I changed out the rice for quinoa, and just added cheese on top. I thought a cheesy cauliflower bake sounded good.
This turned out soooo amazingly good, and so simple! I couldn’t believe how the cauliflower cooked down in the crockpot!
Quinoa and Cauliflower Bake
Print this recipe!
1 head cauliflower, cut into florets
1 cup uncooked quinoa
3 1/2 cups vegetable stock
1 cup gouda cheese (or your choice of cheese)
Combine the quinoa, cauliflower and vegetable stock in a crockpot. Turn the crockpot on low, and cook for 6-8 hours.
About 30 minutes before you want to eat, add the cheese, and stir to combine.
Eat up!
I mean, it really doesn’t get much easier than this. I admit I was a little leery a couple times during the day when it was cooking – I didn’t think the quinoa would cook up, but it did! I just think this tastes so perfect – it doesn’t need anything else in my opinion!

I am on SUCH a cauliflower kick right now, I have got to make this! I mean, you can’t get much simpler while still sounding so delish. Helps that it’s a gray, stormy day and a hot bowl of creamy quinoa and veg sounds extra-amazing.

Its kinda a gray day here too! I have some cauliflower in my garden but it didn’t grow anything, just leaves, no cauliflower!
Well that’s disappointing! My parents were trying to grow artichokes and apparently the same thing happened there. Great healthy plants, no choke.
