Crockpot Monday: Quinoa in the Crockpot

I am always looking for fun things to cook in the crock pot!  I first thought of this idea when I saw Janetha post on oatmeal in the crockpot.  I knew if I wanted to try that, I would have to substitute quinoa, to keep it grain free.  Then, Jacky posted on quinoa for breakfast!  I decided to give it a try and see how it turned out.

I used to eat oatmeal for breakfast all.the.time.  I think my body got tired of it, but I loved it!  My favorite flavor was coconut with peaches, so that is what I decided to try first!  Something about the warm peaches was just so good to me!

I just combined all the ingredients in the crockpot, and cooked it overnight.

I decided to use this Blue Diamond Almond and Coconut milk:

Why you might ask?  Here is why:

It was on sale!  I have tried this before, and honestly, I don’t love it.  I love the vanilla unsweetened almond milk so much more!  But, I thought it might add some coconut flavor to the quinoa.

Peach and Coconut Quinoa

Print this recipe!

2 cups dry quinoa

4 cups Blue Diamond Almond/Coconut milk blend

4 cups water

1/2 tsp salt

1/2 cup unsweetened shredded coconut

1 vanilla bean, split in half lengthwise, and the vanilla bean paste scraped out

1/4 cup maple syrup, or more to taste

2 cups frozen sliced peaches, chopped

Place all ingredients in the crockpot.

Split the vanilla bean in half and scrape out the inside “vanilly” part.  Place in the crockpot, and put the vanilla bean pods in as well.  They still have a lot of flavor, and will flavor the quinoa all night long!

Cook on low for 6-8 hours, or overnight.  Discard the vanilla bean.  Serve!

I decided to make some coconut butter to serve on top of this breakfast.  Simply place 3 cups of unsweetened shredded coconut in the food processor, and process until smooth – mine took about 6 minutes.  Drizzle on top of the cereal.

I like my breakfast only lightly sweetened, so only a little maple syrup was perfect for me!  If you would like, add some more or sweeten to your taste!

I also made a blueberry version – read:  a lot of options for breakfast around here this week!  Blueberries are my next favorite fruit to add to oatmeal, so I had to try!

Blueberry and Chia Quinoa

Print this recipe!

2 cups dry quinoa

4 cups Blue Diamond Almond/Coconut milk blend

4 cups water

1 vanilla bean, split in half lengthwise, and the vanilla bean paste scraped out

1/4 cup chia seeds

1/4 cup honey

2 cups frozen (or fresh) blueberries

Place all ingredients in the crock pot.  Cook on low 6-8 hours, stirring occasionally.  When cooked, discard the vanilla bean.  Serve.

I promise there is no chocolate in this cereal, even though it looks like there is!

I sprinkled a little homemade buckwheat cereal on the top to give it a little crunch.

This is very filling for me, and the hubby liked it too!

Have you ever made breakfast in the crockpot?  This would be great for a large crowd – so nice to have breakfast waiting when you get up!

  2. I never cared for the taste of quinoa, but hey, with enough coconut and peaches, it’s got to taste good! I really like the idea of breakfast waiting for me when I get up. The closest I’ll ever get to breakfast in bed!

  3. I made steel cut oatmeal with raisins and cranberries in the crockpot over night. I will definitely give your recipe a try too, peaches sound perfect.

    • haha, ms. no grains!! :) It actually took a couple trials in the crockpot to get it right (that is why you need so much liquid!)

    We made the blueberry chia seed recipe last night for this morning and we LOVED it! We did 1 cup of quinoa and 1 cup of oatmeal, and used the regular almond milk. SO healthy and SO delicious. We also added a bit of nut mix for crunch. THANK YOU for the recipe!!
