Happy Monday! I hope you are not in a food coma from eating too much yesterday! I must admit, I did not have the best food eating day yesterday, and I am a little ashamed of that. I was just so hungry last night! However, today is a new day, and I am moving forward.
I have been wanting sloppy joes for a while.. I thought it would be something easy to transport to work, and something filling! And – something really easy to make in the crockpot! Works for me!
I found a bazillion recipes for vegetarian sloppy joes online, but finally decided to make these with my favorite bean – pinto! I love pinto beans .. to me they are a very neutral bean, and so creamy inside!
Vegetarian Sloppy Joes
Print this recipe!
2 – 14 oz cans of pinto beans, drained and rinsed OR 3 cups cooked pinto beans
2 – 14 oz cans of fire roasted tomatoes
1 zucchini, shredded
1 green pepper, diced
1 tbsp chili powder
1 tbsp smoked paprika
2 tbsp mustard
2 tbsp apple cider vinegar
1 tbsp honey
1 tbsp tamari soy sauce
Cheese/other toppings optional
Combine all ingredients in the crock pot. Cook on low for 4-6 hours.
NOTE: If you would like to cook with dry beans, simply soak the beans overnight, and in the morning drain the beans, and add to the crockpot. Cover with fresh water. Cook in the crockpot for 6-8 hours, depending on your crockpot. I cooked these in my crockpot on high for 3 hours, and they were done! Add 1 tbsp salt AFTER the beans are cooked. Drain the water from the beans, put the beans back in the crockpot, add the rest of the ingredients, and cook another 4-6 hours.
Serve on buns, with chips, or on lettuce leaves!
I found these little heads of romaine lettuce, and I am loving putting everything on them! Who needs bread!
The lettuce leaves are so crunchy, just don’t let the warm sloppy joes sit on them for too long!
I added some pickled jalapenos on my sloppy joe – so good! You can really make this as spicy or non-spicy as you want.

The lettuce leaves are a great alternative to bread, it looks delicious. I so wish my husband would eat beans!

Thanks, Erin! I brought some to work today, and a head of the romaine lettuce and just tore off leaves and filled it with the sloppy joes. My coworkers looked at me like what are you eating now ?!?! hahaha It was very comforting during a stressful day, what can I say?

I’m a big pinto bean fan, too. They take flavor so well. Love the idea of using them as a base for a sloppy joe! And what’s the “bread” in the first sloppy joe pic?

No need to sneak! I thought it looked good! I love seed/nut-based breads. Used a bunch of chia in my dinner last night, and they add such unique flavor/texture to grain-less goodies.
