Crockpot Monday: Very Berry Cobbler {red, white and blue}

In celebration of the 4th of July, I wanted to come up with a recipe that included the red, white and the blue.

So I started thinking – besides blueberries (the obvious choice), what other food is blue?  I didn’t come up with too many, so I decided to stick with blueberries

  My husband actually suggested blue (purple) potatoes, but I think I have been in more of a fruit mood!

Fruity part:

1 cup blueberries

1 cup cherries

1 cup blackberries

1 cup raspberries

1/4 cup water

1 tbsp coconut sugar

1 tbsp coconut flour

1 tsp almond extract

Cobbler part:

1 cup almond flour

2 tbsp coconut sugar

1 tsp baking powder

dash of salt

1 tbsp coconut oil

1/4 cup milk (I used unsweetened almond milk)

1 tbsp lemon zest

Spray a smallish crockpot with nonstick spray.  (I used a 4 quart crockpot, but a smaller one would work).  Add the fruit, water, sugar, coconut flour, and almond extract.  Stir to combine.

In a small bowl, combine the topping.  Depending on the size of your crockpot, you  may need to double the cobbler ingredients – if you have a smaller crockpot, this may be enough to cover your fruit.  If not, just double it.  Plus then you have extra of the cobbler – which is my favorite part!

Cook on low for 4-6 hours.  When it is bubbling on top, it is done!

I love this because it is quick and easy!  Add some ice cream and you are set!

The warm berries and cold ice cream are the perfect ending to a warm day outside in the sun!
