A huge shaker container of feta cheese? Say it isn’t so! I saw this at Costco, my favorite place to shop, and knew I had to get it!
I love feta cheese! Back years ago, there was a little Greek restaurant next to my work that I would go to with one of my friends for lunch ALL the time. And I would always get the same thing – the Greek omelet! Feta cheese and tomatoes and spinach inside an omelet. Sooo good!
I saw this recipe for Greek Salsa Chicken at Sweet Pea’s Kitchen and it reminded my of my close friend, and all the good talks we would have over lunch at that Greek restaurant! She saw me through a lot of good (and not so good) times!
I put all of these components in a salad! I grilled up some boneless, skinless chicken breast to add to the salad, but this is optional. If you would like to keep this vegetarian, add additional veggies, and trust me, it is filling!
Feta Makes it Bett-ah (Chicken Optional) Salad

Feta Cheese and Olive Topping:
1 cup feta cheese
1/3 cup kalamata olives, pitted
1 tbsp fresh oregano, chopped
1/4 cup fresh parsley, chopped
1/4 cup sundried tomatoes, chopped
1/2 cup red onion, finely chopped
Salad Dressing:
1/3 cup balsamic vinegar
2/3 cup extra virgin olive oil
2 cloves garlic, peeled and smashed
1 tsp dried oregano
2 tsp dijon mustard
1 tbsp maple syrup
salt/pepper to taste
Salad:
Spinach leaves
Sliced chicken breast (optional)
Additional veggies (optional)
Make the feta topping – combine the feta cheese, olives, oregano, parsley, tomatoes, and red onion. Place in a small bowl and set aside.
I could eat this all day everyday – I love all these flavors!!
Meanwhile, grill the chicken and cut into thin slices.
If you are using any optional vegetables, cut those up. I used mushrooms and green peppers.
Prepare dressing – combine all ingredients in a blender and blend until combined.
Place spinach in a bowl – add 4 ounces chicken breast or vegetables – and top with 1/4 cup feta topping.
Add dressing.

You mean you weren’t able to go pick tomatoes off your indoor tomato plants?

Now, I think I am going to use the left over feta cheese topping to make an omelet!

Feta truly does make it bettah! I used to eat plain salads so often, but I just started sprinkling on feta and boy, what a difference! Your salad here looks absolutely mouthwatering! Thanks for sharing.

I make a salad similar to this ALL the time. I love feta, too! I love to put it on a fritatta with spinach and tomatoes.
