When I started making this salad, I didn’t realize how green it would be!
Green isn’t that bad though really. So if you want more green in your life, this salad can help you do just that! I’ve recently been into salads that don’t have lettuce. But, I think that is about to change, because the lettuce in my garden is almost ready!
I also love melon, and don’t eat honeydew very often. I don’t know why … when I want a melon, I usually go for watermelon or cantaloupe! That is about to change though .. this honeydew was so sweet and delicious!
Green Goddess Honeydew and Cucumber Salad
Print this recipe!
1/2 medium honeydew, cubed (about 4 cups)
1 large cucumber, peeled and diced
1 green onion, sliced
2 tbsp fresh mint
1/2 tsp salt
1/2 large lemon, zested and juiced
Combine all ingredients in a medium sized bowl. Mix well.
Refrigerate at least 30 minutes before serving.
A while back, I had made some citrus salts – lemon and lime. (They are really good with margaritas!) I decided since this salad had lemon juice in it, the lemon salt might be really good! And it was!

Never thought to use melon in a salad. Sounds intriguing, though. Of course, I ‘d be tempted to eat the honeydew by itself. Yum! Can’t wait for the fresh ones!

I know, I normally just eat melon by itself, so I’ve been trying to be a little creative!
I think I’m just bad at picking out honeydew melons, because I’m always disappointed by them. Now cantaloupe? I am a cantaloupe-selecting master! (Or maybe they’re just in season right now…) And I love lettuce-less salads as a way to shake things up, yum.

That looks delicious, and I love green! I never used to like cantaloupe, and I have no idea why. But I will always choose honeydew over it or watermelon. I hope you have a wonderful 4th!

BTW, I see that you have a Jeanette Jenkins advertisement on your sidebar. I don’t have that particular exercise DVD, but I do have a few others that she made earlier. They are VERY good and effective exercises.
