I love honey dijon chicken – it is the perfect comfort food to me! It is so simple too! We grilled the chicken, so it didn’t heat up the house, and it didn’t make a mess in the kitchen!
Honey Dijon Chicken
Print this recipe!
4 chicken breast
salt/pepper
1/4 cup honey
2 tbsp dijon mustard
2 tbsp apple cider vinegar
Preheat grill. Season chicken with salt and pepper.
Prepare honey dijon sauce – mix together the honey, dijon mustard, and apple cider vinegar. Mix will with a whisk to remove any lumps.
As the chicken cooks, brush with the honey dijon sauce. Use as much or as little as you like! Use the rest for dipping sauce! Cook the chicken – flipping every few minutes – until cooked.
Note: Once you have used the sauce to coat the uncooked chicken, do not use it for dipping in cooked chicken to eat.

For the potatoes, I just took a couple of potatoes and cooked them in the microwave for about 5 minutes. I cut them in wedges, and wrapped them in a big piece of foil, but left the top slightly open, and placed them on the grill while the chicken cooked. It seems like sometimes when you wrap potatoes in foil on the grill, they just steam. But these were perfectly cooked, crispy and delicious! Seasoned with salt, pepper, and dill! Total yum!
