I made the most amazing kale salad this weekend. I normally only like kale in soups, or cooked in some form (kale chips!). However, I made this salad that is sooo good! I can’t wait for the kale in my garden to grow!

The Lemon Tahini Salad dressing makes this salad so great!
Lemon Tahini Salad Dressing

Print this recipe!
2 lemons, juiced
1/4 cup tahini – seseme seed paste
3 cloves garlic, smashed
1/4 cup nutritional yeast
1 tbsp extra virgin olive oil
1/4 tsp salt
1 dash fresh ground black pepper
6 tbsp water, to thin as needed
Place all ingredients in food processor, and process until smooth. Add as much water as needed to make salad dressing consistency.
Kale Salad
1 bunch kale, leaves torn off the stems
1 cup grape tomatoes
1 cucumber, sliced
1/2 green bell pepper, diced
1/2 onion, diced
1 avocado, diced
1 cup blackberries
1/2 cup pepita (pumpkin seeds)
1/4 cup dried cranberries
1 batch Lemon Tahini Salad Dressing
Place all ingredients in a large bowl. Pour dressing over salad. “Massage” dressing into the kale leaves. Cover and let sit in the refrigerator at least 15-20 minutes, to let the dressing soak into the kale.
I love this salad, because it is something I can make ahead of time, and have for lunches. And no need to have a separate container for salad dressing, which in my case always spills over my lunch box!
In other news, the wedding invitations are almost done!!! We have overcome many obstacles, from envelopes not being the right size, to UNGODLY amount of postage required to send them, to having to get lables for the envelopes because they are too dark to see the ink on them! But, we are almost there! Here is a sneak peak:
