These last couple days have been pretty stressful for me. First my site was hacked, then yesterday when I woke up, I still could not get into my dashboard. Another day, with my wonderful husband to support me, trying to figure out what the problem was. I think we are back up and functioning – although I am a little scared every morning to check out my blog now!
So, that definitely called for pancakes. I love pancakes, but I have not been able to figure out almond flour pancakes. They just are too thin, or don’t hold together well. However, this recipe was a winner! Fluffy pancakes that held together, and were our comfort food while trying to figure out the technical aspects of running a blog!
My favorite ever pancake combination is lemon blueberry. Something about that combination is so good to me! I try other combinations, but always come back to the lemon blueberry!
Lemon Blueberry Almond Flour Pancakes
Print this recipe!
2 cups almond flour
1/2 cup potato starch
1 tsp baking powder
2 large eggs
1 tbsp sucanat
1 tsp lemon extract
1 1/2 cups buttermilk
1 cup frozen blueberries
In a medium sized bowl, mix together the almond flour, potato starch, sucanat, and baking powder. Add in the eggs, lemon extract, and buttermilk, and mix well with a spoon. Add the blueberries, and stir again.
Preheat a small skillet over medium heat. Make sure the skillet is warm before you start cooking the pancakes. Spray the skillet with nonstick spray, or add pad of butter.
Add 1/3 cup batter at a time to the preheated skillet. Cook for 1-2 minutes, until you see bubbles forming on the pancake. Flip and cook for another minute on the other side.
Place in a warm (200 degree) oven to keep the pancakes warm while you cook the rest of them.
Serve with your favorite toppings. I used maple syrup, banana slices, and pecans.
So glad I have a go-to almond flour pancake recipe now! I have tried this in the past with tapioca flour, but the pancakes just didn’t hold together. This was kind of a spur of the moment mix of flours, so I’m glad it turned out!

what if you dont have potatoe starch?
Hey Julie – I replied to you on Facebook, sorry I was away from my computer today! I tried tapioca starch, and they just didn’t hold together for me. I have not tried arrowroot … if you can have white or brown rice flour, you can try that, that usually does work for me, but I am trying to stay away from grains. You probably could try just leaving it out and using less liquid … pancakes with just almond flour have always been so hard for me, I don’t know why!!
These look fluffy and delicious! I’ve made some crumbly dense ones with almond flour myself. lol. Haven’t tricked anyone into eating those yet! Ha. But looks like there’s hope

Thanks Jan … do it, don’t put it off! I’m going to have to update my post, because I had some additional problems after I posted it. Gah … and it is so frustrating not knowing what to do! That is the thing about having your own website, you are kinda an IT department of 1!
