No Bake Cookie Dough Cookie Bites

Thanks for all the comments yesterday on the wildfire!  It is still burning away, close to 47,000 acres.  My husband shot this picture … crazy stuff, but I love love the flower!

This week, I have been making these raw “bites” and putting them in the freezer, and then pulling them out to snack on.  They are the perfect warm weather treat!

I made several variations.  The good news is that you can flavor them however you want!  At first, I made them with ground cashews and chocolate chips – kind of like a no bake chocolate chip cookie.  Then I figure – almond flour really is just ground up almonds, so what if I used that?  Then I made a version with some pecan flour!  I can’t decide which ones I like best!

No Bake Cookie Dough Cookie Bites

Print this recipe!

1 cup ground nuts (cashews/pecans (or pecan flour)/almonds (or almond flour)

2 tbsp ground flaxseed

1/4 cup addins (extra sugar/shredded coconut/peanut butter (or peanut flour!)/chocolate chips

2 tbsp honey

2 tbsp coconut oil

Mix together all ingredients.

Stir well to combine.  Form into balls (I got 12 balls).   Place in a covered container in the freezer to firm up.

I like the cashews ones because they are crunchier (the cashews were not as finely ground as the flours), I like the almond ones with coconut mmmmm, and the peanut butter ones are just so … peanut buttery!

The key is to keep them in the freezer so you aren’t staring at them all day

  2. Oh my gosh, I have a feeling I would absolutely love these! I usually have several batches of “fudge” in the freezer–aka cocoa powder, banana and peanut butter mashed together and frozen–and these balls would be a tasty change.

    • Your version sounds good! I was trying to think of a non-nut version, so I think that would be yours! Yum!

      • Ooo, I wonder what would happen if you used coconut flour instead of almond in your recipe to make them nut-free? Now that I need to try–I still have so much coconut flour that I really don’t know what to do with (I’m not a huge fan of it–but as the base for a frozen treat? That might change my mind).

    • haha thanks Biz. Luckily they keep him away from any real danger. But, the area he was in last night is being evacuated today because the fire spread!!

    • Thanks Tami, it is sad :( We are hoping for rain! Although, I don’t think that is going to happen anytime soon. They say it probably will not be under control until winter gets here ….
