Oatmeal Free Oatmeal Raisin Cookies

I have been craving oatmeal raisin cookies this week.  The spices, and the oatmeal and raisins, just sounded so good!  However, I have not had any oatmeal in a good 6 months – I have found even the gluten free oats bother my stomach!  I think most people assume oatmeal is a “safe” food, and I always get this look of amazement when I say I don’t eat oatmeal!

I used to eat oatmeal every morning at work, and I always felt bloated and sick to my stomach afterwards.  But, I just thought it was a “full” feeling, and kept having it!  Once I stopped, I realized I didn’t HAVE to feel that way when I ate, and that is when I really started investigating what made me feel good when I was eating, and what made me feel not so good!

So, no oatmeal for me.  But that is ok.  I sure don’t miss feeling sick after I ate it!  These cookies do not have oatmeal, but they are still chewy and delicious!

Adapted from Organic Thrifty

2 cups almond flour

2 tbsp coconut oil, liquified

1/4 cup honey

1/2 tsp baking soda

1/4 tsp each:  nutmeg, cloves, ginger OR 1 tsp cinnamon

2 tbsp ground flax mixed with 4 tbsp warm water

1/3 cup raisins

Preheat the oven to 350 degrees.

First mix together the flax egg – in a small bowl combine 2 tbsp flax and 4 tbsp warm water.  Let this sit while you prepare the rest of the ingredients and it will thicken slightly.

In a medium bowl, combine the almond flour, coconut oil, and honey.  Stir to combine.  Add in the baking soda and spices.  Pour in the flax egg and mix with a spoon until well combined.  Add in the raisins.

Form about 1 tbsp dough into a ball.  Place on a greased cookie sheet, and continue making “ball” to fill the cookie sheet.  (I fit 9 on my cookie sheet, but it is a small one).  Flatten the balls with your hand.

Bake at 350 degrees for 10 minutes.  The cookies should be soft, but lightly browned.  Let cool on the baking sheet for 2 minutes, then remove to a wire rack to cool completely.

I really like these cookies, because they are chewy, and not too sweet!

Now I just need a glass of almond milk!

  3. I’m a huge oatmeal lover too but every time I eat it, I feel nauseous! It’s the strangest thing.

On another note, I love these cookies. And I also love that it won’t make me sick after I devour them!

  4. My primal friend whips out almond-based cookies for us to both enjoy–I’m making him add raisins next time! Oatmeal raisin cookies are totally my favorite, and while I can eat oatmeal, I have no problems trying out an almond-based alternative. Sounds yummy!

    • Thank you so much! I have tried soaking them, gluten free oats, regular oats. I’m ok with not having them though :)

      • You’re welcome! You’re being featured on my blog today! Come and see! The only other thing I’d mention is that soaking with buckwheat (1/10 of the total amount) might help. Buckwheat has phytase which oats do not have and that is what generates the good effects of a soak.

I am staying away from a lot of grains now so I’m not trying to convince you – just passing on info. :-) .

These look amazing! I can’t do flax would an egg work?

    • Thank you! I think you could… I was trying to keep them vegan friendly, so that is why I added the flax egg. I didn’t try it with a real egg, but it should work the same! I might just try that (gives me an excuse to make more cookies …) Thanks for the comment!
