This week, I saw this recipe for Lemon Parmesan Cauliflower, and I thought it sounded so good! I am always looking for different ways of eating cauliflower!
I decided to kick it up just a little with my favorite herb … dill!
Parmesan Dill Cauliflower
Print this recipe!
1 head cauliflower, broken into florets
1 lemon, juice and zest
1/4 cup fresh dill, minced
1/4 cup parmesan cheese
salt/pepper to taste
Wash the cauliflower, and break into florets. Place on a baking sheet. Add 1 tsp olive oil, and salt/pepper. Juice and zest the lemon and pour over the cauliflower, as well as sprinkling on the dill. Mix well.
Roast at 450 degrees for 30 minutes, or until tender. We actually cooked our cauliflower on the grill!
When the cauliflower is tender, remove from the oven. Pour into a serving container, and add the parmesan cheese.
Serve.
I portioned this into 4 servings, and each serving was 134 calories.
BTW, we served this with some unphotographed steak. So simple, but so good!
Now I have a whole other head of cauliflower to use … I think it is time for some Cauliflower Pizza Crust!

I love dill! I was bummed because I had a cauliflower in my downstairs fridge, but the temp got adjusted and it froze. I’ll put this on my grocery list for next week though!

Bobby and I aren’t big cauliflower fans and somethings I feel guilty for not giving it another chance. There just never has been that recipe that caught my interest – until now! Lemon and Parmesan – how could that NOT be good?!?! I’ll have to give this try! Thanks for the inspiration!

This sounds great. Funny, I was just discussing cauli recipes last night with someone. I recently had one that was with goat cheese and that was yummy too (although I like the idea of dill a lot!).
