Peach and Blueberry Banana Bread {Grain Free and Vegan}

Right now, if you can’t tell, I am obsessed with all things peaches!  I should have made this Peach Keen Week on The Healthy Beehive!

I can’t help it .. peaches are so versatile!  Sweet or savory, they seem to pair so well!  I had peaches, blueberries, and bananas in my pantry that needed to be used, so this banana bread was born.

Peach and Blueberry Banana Bread

Print this recipe!

1 cup uncooked quinoa, toasted and ground into flour

1/2 cup almond flour

1/4 cup potato starch

1/4 cup tapioca starch

2 tsp baking powder

1/2 tsp salt

1/2 cup water water + 2 tbsp ground flaxseed OR 2 eggs

2 large bananas, mashed

1/4 cup coconut oil

1/4 cup sugar (I used organic cane sugar)

1/2 tsp lemon extract

1/2 cup blueberries

1 peach, diced

Preheat the oven to 350 degrees.  Place the quinoa in an ovenproof bowl, and place in oven to toast for 15 minutes.  Remove from the oven and let cool.

Prepare the flax egg – combine 1/2 cup water with 2 tbsp flaxseed.  Set aside to let this gel.  Alternatively, you can use 2 eggs.

When the quinoa is slightly cool, grind into a flour in a coffee grinder, or high speed blender.

In a medium bowl combine the flours and starches, baking powder and salt.

In a separate bowl, mash the bananas.  I find it easier to slice the bananas, and then mash them.

Add in the coconut oil, sugar, and lemon extract.  Mix well, and add to the dry ingredients.  Carefully stir in the blueberries and peach.

Prepare a loaf pan by spraying with nonstick spray.  Spoon the batter into the loaf pan.

Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.  Let cool in the loaf pan 30 minutes.  Then, place the pan on its side (the long side), and let it cool another 30 minutes.  This will help the steam from the bottom of the loaf escape, so the bottom is not mushy.

Remove from the pan, and place on a wire rack.  Let cool completely, or slice and enjoy!

When I took it out of the oven, it was cracked just like this, so I was a little worried it would not slice into nice, pretty slices….

The bread is a little fragile, but definitely held together.  Win!  I love that you can see the pieces of peach and blueberry in it!

With coffee!  I am a sucker for froth on my coffee.  As a wedding present, we received a frother from Crate and Barrel.  My life has never been the same!  Coffee is so much better with froth!  Of course, that was the $10 model, but I also got a $1 frother from Ikea.  However, Alison from Mama’s Weeds recently posted a no-frother-needed method to froth your coffee.  Basically, you fill a glass jar with the amount of milk you want in your coffee, put on a lid, and shake it shake it shake it!  Then, just microwave it to warm the milk for your desired amount of time (I usually go with 40 seconds).  Instant froth!!!  I’m obsessed… plus, it is so much fun!

  2. I’m eating a peach in my yogurt right now. My coworker brought me some last night in exchange for the banana muffins I made her. Next time I will have to pair the two together. This bread looks delicious. I really love summer fruit.

    When I was in college I bought a friend the same frother from Crate and Barrel. Well she was obsessed with her froth so when the frother broke we had to trek all the way to Vermont to purchase another because she couldn’t live without it. Clearly these were the days before internet!!

    • haha nice! When I first got the frother, I thought it was the coolest thing, but I really am loving the shake the milk till it froths method. I have tried it on real milk, and almond milk, and it works on both!
