Peach and Cherry Cobbler

Isn’t she gorgeous?  This is my friend Ruth and her husband Mike.

Her funeral arrangements have been made, and I will not be going.  I did not make this decision lightly ..  but I think it is the best thing for me.  As my friend Julia keeps reminding me – everyone grieves differently.  I have experienced deep grief in my life, and I think I need some time to process everything.  I have my memories of her, and I know she is now free of cancer and has achieved NED (no evidence of disease)!

So I plan on taking some time enjoying our mountains and my Sammy!

Peach and Cherry Cobbler

Print this recipe!

Crust:

1 1/2 cups almond flour

1 cup pistachio flour

1/4 cup sucanat (or your choice of sugar)

2 tbsp coconut oil

1 tsp vanilla extract

Filling:

4 peaches, chopped

1 cup cherries, pitted

1/2 cup water

1/4 cup sucanat

1 tsp vanilla extract

1 tsp almond extract

1 tbsp cherry brandy

1 tbsp arrowroot

Preheat the oven to 350 degrees.

First, prepare the filling.  Combine all ingredients, and mix well.  It should be slightly clumpy.  Divide it in half, and press half in the bottom of a greased 8×8 pan.

Next, prepare the filling.  In a medium saucepan over medium heat, combine the peaches, cherries, water, sucanat, vanilla and almond extract, and brandy.  Heat until it comes to a boil.  Add in the arrowroot, and stir until the mixture thickens.  Pour over the crust in the prepared pan.

Crumble the rest of the topping over the fruit mixture.  Bake for 30 minutes.

When you take it out of the oven it should be bubbly and smell delicious!

Let cool for a few minutes, if you can!

I love fruit crumbles!  The pistachio flour is something I have had for a while and never used.  You can grind pistachios yourself in a blender or coffee grinder, or use a different flour.  I really liked the taste of the almonds and pistachios!

So do me a favor … hug those you love, and celebrate life.  I know I am!

I like to celebrate life over grieving over death, too–I don’t think it is a sign of how much someone meant (and still means to you), it’s just, like you say, we all grieve and say goodbye in different ways. I get to see my parents this weekend, and I’ll give them an extra-big hug. And maybe try to talk them into some cobbler. I have a feeling it would be an easy sell.

  7. Celebrating her life is truly the best way to remember a loved one. My prayers are with you while you grieve for your dear friend. And also with her family…I know that this time of sadness is hard for the living.

    But thank you for sharing your cobbler recipe…there is really not a cobbler recipe I don’t like :)

  8. Oh goodness. I’m so sorry for your loss. And at such a young age. Tragic. A friend of mine died last year, lung cancer. When we arrived at the funeral home, I could hardly make myself get out of the car and once inside it was torturous sitting through the ceremony, watching the photos on the screen (which we were in a few). It may have been that I should’t have gone.

    • Yes, long story, but 4 years ago my fiancee died … I guess it is ex-fianee now. I made the mistake of touching him. I still have nightmares about that. I just don’t do funerals well…. I don’t if anyone does, really.

  10. Oh Jane – I’m so sorry to read about the loss of your beautiful friend! I just lost one a few weeks ago myself, so I’m feeling your pain and understand what you’re going through. My thoughts are with you and wishing you comfort and lots of fond memories that make you smile. Nothing like a cobbler to bring me out of a funk! :)

    • Thank you so much! She was beautiful, inside and out. I know she is dancing with the angels now, but I still hear her laugh in my mind .. she had the most fun laugh to listen to! It made you want to laugh even if you didn’t feel like it :)
