Peanut Marinated Chicken with Quinoa Pudding

How’s that for a combination?

We had some chicken drumsticks in the freezer that I had gotten out to thaw.  So the obvious question was – how can I make chicken a little more exciting?

I decided to make a marinade – a peanut marinade!

 

Peanut Marinade

Print this recipe!

1/2 cup peanut flour

1/2 cup water

4 cloves garlic, minced

1 tbsp fresh ginger, peeled and finely grated (I used a microplane)

1 tbsp tamari gluten free soy sauce

1 lime, juiced

Mix together all ingredients in a small bowl.  Stir will to combine.

Note:  If you don’t have any peanut flour, you could probably substitute some peanut butter, although I did not try that.

I poured the marinade in the same bag that the chicken was thawing in, and let it do its thing!

Grill to your liking – I like mine a little charred!  Serve with some chocolate barbeque sauce!

My original plan was to serve some coconut quinoa with this – quinoa cooked in coconut milk instead of water.  But, as I was cooking it, I just thought it seemed boring.

So, I added a little bit of this and little bit of that, and came up with Quinoa Pudding!

Quinoa Pudding with Raisins and Coconut

Print this recipe!

1 cup uncooked quinoa

1 can (14 oz) coconut milk – either lite or full fat

1 cup water

2 tbsp honey

1/4 cup raisins

1/4 cup unsweetened shredded coconut

1 tsp cinnamon (or 1/4 tsp each of allspice, ginger and cloves)

1 tsp vanilla extract

Place the quinoa, coconut milk, and water in a medium pot over medium heat.  Cook, stirring occasionally, until all the liquid is absorbed.  Add in the rest of the ingredients.  Cook 5-10 minutes more, stirring to combine and heat all ingredients.

Served with the chicken, it was a very filling meal!

    • Thank you so much! I know it does .. When I keep busy it is better. The funeral is going to be in IL (she lived in CA, but was from IL so there was much discussion about where she would be buried), and I just decided I’m not going to go. I think it would stress me out too much. “Time and God” … that is what I need right now. :)

  6. What brand of peanut flour do you use? I used to buy the Trader Joe’s peanut flour and loved it along with its reasonable price, but they stopped selling it.
