Simple Breakfast Quiche

Happy January 2!!  Hard to believe 2013 is here already, but it is!

I love breakfasts that I really don’t have to think too much about, but are filling.  I also like having leftovers that are easy to reheat for breakfast at work.  Eggs are always a winner in my book!  This quiche is easy to put together, and you can cook it while you are getting ready in the morning.  Plus, the quiche sets up with an instant crust in the oven, so you don’t have to prepare a separate crust.  Even my husband said that even though real men don’t eat quiche, it still was pretty good.

Simple Breakfast Quiche

Print this recipe!

4 large eggs

2 cups milk

1/2 cup flour

2 tbsp coconut oil

1 tbsp fresh rosemary, chopped

salt/pepper

Your choice of fillings:  (I used about 1/2 cup each of spinach, ham, cheese)

Preheat the oven to 400 degrees F.

In a blender, combine the eggs, milk, flour, coconut oil, rosemary, and salt/pepper.  Blend until well combined.

Pour into a greased pie pan.

Mix together your fillings and carefully stir into the quiche.  Use any combination you would like!  I used some extra ham, spinach and feta cheese.

Bake at 400 degrees for 45-50 minutes.  To make sure it is done, cut the middle with a small slit of a knife, and make sure it is firm and cooked on the inside.

Serve!

You probably could get 6-8 servings out of this, but I cut it into 4.

It was soooo filling!  I did not think just one slice of this would fill me up, but it did!

Note:  You don’t have to use coconut oil, you probably could leave it out entirely, or use butter or oil.  However, I really loved the taste of the coconut in the crust!

  1. Quiche is actually one of my go to dinners for my husband and son when I have a really busy day and have to go to bed before work. It is quick to make, nutritious and filling. I make a similar quiche from a recipe I got on Spark People years ago. Yours looks even easier so I’ll try it next time. I’ve never added coconut oil but I bet it lends a nice flavor.

  3. I right there with you in loving quiche! We usually have it for supper because it takes too long to cook for breakfast. I could easily cook this for supper. Love the idea of putting coconut oil in the crust! Happy New Year!!!

  5. This sounds like a winner to me! I used to make a really veggie filled quiche with cheese in it for brinner but truly, I think I’d like this one with the ham more. Pork and eggs just go so well together. And I love magic crusts! The one I made did that too…I think it’s called “impossible” pie when it has the self-made crust.
