Fall really is my favorite time of year (I think!) I love all the seasons! Glad I live in a place that has all 4!
This weekend there was a rumor of snow in the forecast. I really love the snow. And the first snowfall! There is something refreshing and new and clean about the FIRST snow of the season. We kept hoping we would get to see it up in Granby this weekend, and not miss it! We lucked out!
It was a very pretty snow … although we had to leave to get back to town, so we weren’t able to enjoy it!
The poor garden … I had rototilled everything except some lettuce, spinach and chard. I think this might be the end of it!
I picked all this today. And a carrot! I had just been letting my carrots grow … I planted a whole bunch of them, but less than 5 came up! I had no idea it would be this long! Who hoo!
I decided we needed to celebrate the first snow with pancakes, pumpkin pancakes!
First Snow Pumpkin Pancakes

1/2 cup all purpose flour
1/2 cup whole wheat flour
2 tbsp stevia
2 tsp baking powder
1/4 tsp allspice
1/4 tsp cloves
1/4 tsp powdered ginger
1/4 tsp salt
1 cup unsweetened almond milk
1/4 cup plain, nonfat yogurt
1/2 cup pumpkin puree
1 egg
Preheat a medium skillet over medium heat. Spray with nonstick cooking spray.
In a medium bowl, combine flours, stevia (or sugar), spices, and salt. Stir well. Add milk, pumpkin puree, yogurt, and egg. Mix just enough to combine all ingredients.
Spoon approximately 1/4 cup pancake dough on skillet. Cook until you see bubbles forming – 1 to 2 minutes. Flip and cook another 1 minute.
Place on a plate, and continue cooking all pancakes. You may put in the oven on “warm” setting (or 250 degrees) to keep warm while you cook the rest of the pancakes.
Makes about 8 pancakes (depending on size)
