Wasting away in Watermelon-ville

Happy 4th of July!

watermelon margarita

This recipe is from Boulder Locavore.  When I first saw this I knew I had to try it!  I have been into infused vodkas recently … cranberry vodka, strawberry vodka …  and infused tequila sounded amazing!

My friend Julia visited me recently, and I kept telling her about this amazing watermelon margarita that I just HAD to make for her.  Unfortunately, time ran out and I did not get to make it for her.  She told me I just HAD to post this.  So – here you go!

First, you infuse the tequila.

watermelon infused tequila

Watermelon Infused Tequila

1 – 750ml bottle 100% agave tequila

2 lbs cubed watermelon

Place the watermelon cubes in a large jar.  I use a 1/2 gallon Ball canning jar.  Pour the tequila over the watermelon cubes.  Let this sit at room temperature 1-2 weeks.  Periodically shake it to mix up.  After 1-2 weeks, place in the fridge, and it is ready whenever you need it!

Not only is this the perfect drink for the 4th of July, I think it is perfect year round!  Honest – sometimes when I have an overly rough day at work, I will come home and make one.  Don’t hate me?
