This last week, I saw this recipe for watermelon lemonade. It just sounded so good! The husband and I love our watermelon! I decided to change it up a little bit by adding some mint. This turned out so good! I made a huge pitcher of it. I think this would be perfect for a summer potluck, and something kids as well as adults would like!
I decided to only lightly sweeten it, because the watermelon is sweet enough on its own! If you like it sweeter, you may need to add more sweetener, but I think this was the perfect summertime drink!
Watermelon Mint Lemonade

8 cups water
1/4 cup honey
1 bunch fresh mint
1 1/2 cups fresh squeezed lemon juice
12 cups watermelon juice (1 medium – large watermelon)
First, stuff the mint into a tea ball.
In a medium sized pan, add the water and honey. Hang the tea ball on the side of the pot, and bring to a boil. Turn off the heat, and let the mint continue to infuse the water as it cools.
Meanwhile, juice the lemons. You can do this by hand, but I find a juicer makes the job sooooo much easier! About 5-6 lemons made 1 1/2 cups lemon juice for me, but my lemons were on the larger size.
Also, juice the watermelon. I used my juicer for this. You can also just blend watermelon cubes, and strain out any seeds or pulp – I just let my juicer do it for me!
Watermelon juice is so pretty!
When the mint infused water has cooled, mix together the water, watermelon juice, and lemon juice. Place in the fridge to chill.
Ummm yum! So delicious and refreshing! This will be in our summer rotation for sure!
I’m still trying to figure out how to make a cocktail out of this lemonade … vodka? Sparkling wine? I will have to do some experimenting! All I know is this is pretty good by itself too

Definitely! You can also just blend the watermelon, you just might need to strain it. I didn’t get my juicer until this last winter, but I love it!! I don’t “juice” all the time, but it is a healthy way to get some nutrients, and useful in other ways too. (I even “juiced” almonds to make almond milk!)
