White Fish Salad with Garlic Lime Dressing

Recently, I’ve been trying to eat a little healthier.  You know the drill, it was the holidays, and I have put on some weight.  Blah blah blah.  On top of that, I have been sick these last few months, and exercising just hasn’t been happening!  I am trying to do something about this now before I have to buy a whole new wardrobe!

Also, since I started eating gluten again, I have been eating carbs carbs carbs.  Probably just from not having it for so long, I have been overdoing it.  So, I decided to go somewhat low carb.  I never was able to do a low carb diet before, because I just love my carbs so much!  I am trying to focus on protein and veggies.  Because lets face it, I really don’t think I eat enough veggies.

This salad – surprisingly (to me) – was very filling!  It is a very clean eating salad, and I felt great after eating it – not too full or stuffed.  The lime juice in the dressing really made the flavors “pop” and added a little punch to the salad!

White Fish Salad with Garlic Lime Dressing

Print this recipe!

Salad:

White fish (tilapia, mahi, cod)

Smoked paprika, salt, pepper

Romaine lettuce, chopped

Bell peppers, chopped

Red onion, chopped

Optional:  corn, avocado, cheese, tomatoes

Salad dressing:

1 lime, juiced and zested (about 1/4 cup lime juice)

2 tbsp extra virgin olive oil

1 clove garlic, minced

salt/pepper to taste

Preheat the oven to 400 degrees.  Place the fish on a baking sheet, and sprinkle with smoked paprika, salt and pepper.  Flip over the season the other side as well.  Bake for 10-15 minutes, or until the fish flakes easily.

Place all your salad ingredients in a serving bowl.  I was a little short on veggies, so I only used lettuce, bell peppers, and red onion.  Add whatever you have!

While waiting for the fish to cook, prepare the dressing.  Place all ingredients in a small jar and whisk well to combine.

Add the fish on top of the salad, add dressing, and eat!

Even if you aren’t trying to lose some weight, I think you would like this salad!  I did add some cheese to my husbands salad, but mine was fine without it!

Meanwhile, Sammy isn’t feeling so hot today.  Poor little dude!  I’m off to snuggle a little bit!

  2. I wish I liked fish – tilapia leaves a bad taste in my mouth for some reason, and while I love Chilean sea bass – its the most expensive fish in the store – $21 a pound!

  3. Awww poor little Sammy! Such a cute pic of him curled up in front of the stove though. awww. Your salad is perfect for the diet plan I’m on–I’m eating mainly lean meat, veggies & fruit and also yogurt. I just bought some smoked paprika and that sounds great on the fish! I’m saving this!

    • I posted about it here. I started eating gluten before I left for India because I knew it would be hard. All along, I thought my problem was more overeating, not really gluten, but I think going gluten and grain free did help me. I have been preparing grains more in the traditional methods — soaking and all that. I think that makes them easier for me to digest too :)

  5. I’m not eating gluten free but I am trying a rule to only have pasta/bread/or white potatoes only once a week. I had a hamburger for lunch the other day, so that’s my once per week sin. I’ve been making a lot of dishes like this one. I love your simple lime vinaigrette.

  6. This looks so pretty! I like the idea of using lime juice in the dressing instead of the typical lemon juice. usually for lunch I fix a large green salad with some source of protein served on top. It’s a good way to get in several veggie servings and so low calorie!
