Have you fired up your grill yet this spl-inter? (combo of spring and winter) . I know winter isn’t over here yet, but we love to grill! We keep the grill on our deck, and we even grill in the middle of winter!
But, Happy Spring! No matter what the weather says, the calendar says it is spring! I was just walking through my Costco, and these ribs jumped out at me, and said BUY ME! I wasn’t planning on ribs, but when a package jumps up and smacks you in the face, you listen. I knew we would be on our stay-cation, and that my husband would love some ribs! I try to celebrate the little things in life, and this week together is reason to celebrate!

1 rack ribs
Your favorite BBQ sauce – 1/4 to 1/2 cup, depending if you like them messy or not!
Rub:
2 tbsp salt
1/2 tsp fresh ground black pepper
2 tsp smoked paprika
1/2 tsp cayenne pepper
1 tsp meat magic (Hubby’s addition to the rub!)
1/2 tsp ground allspice
2 tbsp brown sugar
In a bowl, mix together the rub until well combine. Sprinkle and pat on both sides of the ribs so it sticks.
Refrigerate for 30 minutes to 1 hour.
Preheat oven to 250 degrees. Place ribs on a baking sheet (if they fit!), or a broiler pan, or any pan that you can fit them on. I love using broiler pans because the water in the bottom part will slowly steam the meat, and it gives a place for the drippings to go!
Bake for at least 2 hours. Remove from the oven and fire up the grill!
We cut our rack of ribs in half, because it was so long!
Grill the ribs 10-12 minutes per side, or until browned and crispy. During the last few minutes, brush on your favorite BBQ sauce. On BOTH sides. I hate stuff that is only flavored on one side! In my house, everything gets seasoned on both sides!

The rub was amazing – sweet but spicy!With ribs, you have to have sides, right? Even though BBQ beans sound so good right now, let me introduce you to Blue Cheese Potato Salad!
I l.o.v.e. cheese, but blue cheese is a fav on my list! I have been getting this container from Whole Foods recently, and it is so good! I also found this Dill Mustard that I am currently in love with. I love condiments, and these two made this salad!

Dill and Blue Cheese Potato Salad
Print this recipe!
10 potatoes, peeled and cubed into bite sized pieces
1 tsp salt
1/4 cup extra virgin olive oil
2 tbsp apple cider vinegar
2 tbsp dried dill
1 tbsp dijon mustard (or Dill Mustard)
1/2 to 2/3 cup blue cheese crumbles
Peel the potatoes and cut into bite sized pieces. Place in a pot and cover with cold water, and add the salt. Boil potatoes for 20-30 minutes, or until fork tender. Drain water from potatoes, and place in a medium sized bowl.
Here you have plain, boring, but cooked, potatoes!
Combine the dressing: olive oil, vinegar, mustard and dill. Coat potatoes with dressing.
Add salt pepper to taste, and let potatoes cool slightly.
Add blue cheese and mix well.
And here you have dilly, cheesy, very non-boring potatoes!
Cut the ribs into pieces …
…with a little extra barbeque sauce on the side …
..and watch them disappear!
Definitely a winner over here!

Oh boy, it’s been a while since I’ve had ribs. Since last summer’s ribfest in fact. They’re one of my favourite meat cuts.
Ribs is kind of a summer food, but I think they are good anytime!
The dill potato salad won my heart: I love potatoes, I love dill. Your ribs looks very good. I was thinking of making some for my men. Need to find a good meat first…:)

Me too! I think the dill potato salad was my favorite part of this meal too! I love dill, and with the blue cheese and potatoes it was so good!
We have two grills – our gas grill is off our front door on our deck, and a smoker and charcoal grill in the back. I’ve been known to make my grilled salsa after scraping six inches of snow off my grill!

I am ashamed I didn’t use my grill at all this winter in AZ, which is prime grilling time. I might have to dust it off soon. Those ribs look awesome.
